GFP Day 17 - Mushroom Alfredo

This week's co-op haul included something I'd never used before...


We eat a lot of mushrooms, but usually they're baby bellas or regular white mushrooms. Decided to just make an Alfredo sauce with sautéed shiitake mushrooms. I took the woody stems off and quartered them. 


Mushrooms and Alfredo need some diced garlic...


Sauté in a couple tablespoons of butter and a little olive oil. 


Looking and smelling great! Still have some of those Costco French rolls taking up space in the freezer, and what's pasta without a little garlic bread?


Just a little butter, then sprinkled with some Tones garlic bread seasoning. Bake at 400 for about 10 minutes, then broil for a couple minutes to get nice & toasty. 

Add a couple cups of cream and some Parmesan cheese to the mushrooms and garlic and stir while heating. 


Bring to a simmer, then add the cooked fettuccine. 


Mushroom fettuccine Alfredo with garlic bread. Very tasty! There IS pasta under all that mushroom Alfredo sauce! 


We didn't think the shiitake mushrooms tasted much different than portabella mushrooms, so we probably won't use them again, since they're usually more expensive anyway. And there's leftovers for Jo to have for lunch tomorrow!
